Chili Lime Jerky

Chili Lime Jerky

  • Fuel: Charcoal
  • Cooking Time: 4 h to 5 h
  • 6 to 10 portions

Ingredients

  • 4 lb - Beef round (any cuts)
  • 2 tbsp - Chili powder
  • 1 tbsp - Ancho chile
  • 1 tbsp - Ground cayenne
  • 1 tbsp - Onion powder
  • 1 tbsp - Garlic powder
  • 1 tbsp - Black pepper
  • ½ cup - Honey
  • 2 tbsp - Worcestershire sauce
  • ½ cup - Soy sauce
  • Juice and zest from 2 limes

You will also need

Oak and apple wood chunks for smoking

Skewers (optional)

Preparation

  1. Mix all the ingredients except the beef into a bowl;
  2. Cut the beef roast into thin slices of about 1/8 to 1/4 inches thick, then put the slices into the marinade and let them marinate for 4 to 6 hours;
  3. Preheat your smoker for about 200 to 225°F;
  4. Remove the beef slices from the marinade – If you want to maximize space in your smoker you can thread each beef slices onto skewers and have them hang vertically below the grill grate (see video);
  5. Smoke for 4 to 5  hours using oak and apple wood chunks.
