Caveman Steak Tacos with Chipotle Salsa

Chipotle Salsa

Nacho Cheese Sauce

  • 3 tbsp - Butter
  • 3 tbsp - All purpose flour
  • 1 ¾ cup - Whole milk
  • 8 oz - Cheddar cheese, shredded

Preparation

  1. Slice the flank steak in half lengthwise, brush both sides with olive oil and generously season with McCormick Grill Mates® Chipotle & Roasted Garlic Seasoning;
  2. Make the salsa: Combine all Chipotle Salsa ingredients into a bowl and set aside;
  3. Make the cheese sauce: In a saucepan, melt the butter and add the flour to make a roux; Add the whole milk and whisk until smooth; Add the shredded cheese and simmer for 10 minutes or until desired consistency;
  4. Arrange a charcoal fire at the center of your grill by spreading the coals into an even layer; Once all the coal are fully lit, place the two flank steaks directly on the embers and cook for 4 to 6 minutes per side;
  5. Using BBQ tongs, remove the steaks from your grill making sure to shake off any loose ashes stuck to the meat; Place the steaks on a cutting board and let rest for 5 minutes; Slice both steaks against the grain into 1/4 inch thick slices and set aside for the tacos;
  6. Assemble your tacos with sour cream, chipotle salsa, steak slices and some cheese sauce; Enjoy!
